Ingredients
  

  • 1 pinch salt enhances sweetness
  • 2 cups whole milk swap with almond, oat, or coconut milk for dairy-free
  • 1/2 cup granulated sugar can replace with coconut sugar or maple syrup
  • 2 large eggs substitute with flax eggs or applesauce if egg-free
  • 2 tbsp unsalted butter replace with plant-based butter if needed
  • 2 tsp pure vanilla extract or 1 vanilla bean pod scraped, or 2 tsp vanilla paste

Instructions
 

  • Gather your ingredients: milk, sugar, eggs, butter, salt, and vanilla.
  • In a medium saucepan, warm the milk over low heat until just steaming.
  • In a separate bowl, whisk together the eggs and sugar until pale and airy.
  • Slowly pour the warm milk into the egg mixture while whisking constantly.
  • Stir in the vanilla extract or vanilla seeds.
  • Return the mixture to the saucepan and cook gently, stirring, until thickened enough to coat the back of a spoon.
  • Pour into ramekins, cover, and chill for at least 2 hours before serving.

Notes

Top with fresh berries, whipped cream, or enjoy plain. This dessert stores well for 3–4 days in the fridge.
