Ingredients
  

  • 1 1/2 cups almond flour
  • 1 cup oat flour
  • 1 tsp baking soda
  • 2 pcs ripe bananas mashed
  • 1/3 cup honey or maple syrup
  • 2 pcs eggs
  • 1/2 cup Greek yogurt or dairy-free yogurt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup unsweetened cocoa powder optional
  • fresh berries or sliced fruit for topping
  • coconut cream or whipped Greek yogurt for frosting

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a cake pan with olive oil or coconut oil and line with parchment.
  • In a bowl, combine almond flour, oat flour, and baking soda.
  • Whisk mashed bananas with honey or maple syrup until smooth.
  • Add vanilla extract, cinnamon, and cocoa powder if using.
  • Blend in eggs and Greek yogurt (or dairy-free yogurt) until creamy.
  • Pour batter into prepared pan and bake 25–30 minutes, until golden and a toothpick comes out clean.
  • Cool completely. Frost with coconut cream or whipped yogurt and top with fresh fruit.

Notes

Variations: Add grated carrots or zucchini for moisture, drizzle melted dark chocolate instead of frosting, or bake into muffins for personal-sized cakes. For vegan, replace eggs with flax eggs and yogurt with a plant-based option.
