Equipment

  • Cake Turntable (optional)
  • Wire Rack
  • Sheet Pan
  • Blender or Immersion Blender
  • Thermometer (optional but helpful)
  • Offset Spatula

Ingredients

Mirror Glaze

  • 1 tbsp powdered gelatin or 3 gelatin sheets
  • 1/4 cup cold water to bloom gelatin
  • 1/2 cup sweetened condensed milk
  • 3/4 cup sugar
  • 1/2 cup water for glaze base
  • 6 oz white chocolate finely chopped
  • gel food coloring navy, purple, black, turquoise, gold, etc.
  • edible glitter or white gel color optional, for stars

Instructions

  • Start with a fully frosted and frozen cake. Chocolate cake works great for galaxy vibes. Place on wire rack over a pan.
  • Bloom the gelatin in cold water for 5 minutes. Meanwhile, heat sugar, water, and sweetened condensed milk until just simmering. Remove from heat and add bloomed gelatin.
  • Pour hot mixture over chopped white chocolate. Let sit 2–3 minutes, then blend until smooth (no bubbles).
  • Divide glaze into bowls and add food coloring: navy, purple, black, turquoise, etc. Swirl together gently in a large cup or bowl without mixing too much.
  • When glaze is just warm (90–95°F), pour slowly over the frozen cake. Start in the center and let it flow outward. Optional: swirl with a toothpick or tilt gently.
  • Optional: Flick white food coloring or edible glitter over the top to make stars. Let cake drip for 5–10 minutes before moving to a cake stand.
  • Chill finished cake in the fridge for at least 30 minutes before serving. This sets the glaze and enhances the shine.

Notes

Galaxy cakes are more forgiving than they look. Try metallic accents for an extra pop. Store in the fridge and serve within 3 days for best shine and texture.
