Instructions
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
Peel and dice apples into small cubes.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
In a large bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla extract.
Alternately add dry ingredients and sour cream, beginning and ending with dry. Mix until just combined.
Fold in diced apples gently until evenly distributed.
Pour batter into prepared pan. Bake 40–45 minutes, or until a toothpick comes out clean.
Cool slightly before slicing. Serve warm or at room temperature, with powdered sugar if desired.
Notes
Variations: Add nuts, try pears, or bake as muffins. For gluten-free, use a 1:1 blend. A simple glaze makes it extra special.
