Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour spooned and leveled
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or plain yogurt

Apples

  • 2 medium apples peeled and diced

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  • Peel and dice apples into small cubes.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then mix in vanilla extract.
  • Alternately add dry ingredients and sour cream, beginning and ending with dry. Mix until just combined.
  • Fold in diced apples gently until evenly distributed.
  • Pour batter into prepared pan. Bake 40–45 minutes, or until a toothpick comes out clean.
  • Cool slightly before slicing. Serve warm or at room temperature, with powdered sugar if desired.

Notes

Variations: Add nuts, try pears, or bake as muffins. For gluten-free, use a 1:1 blend. A simple glaze makes it extra special.
