Ingredients
  

  • 2 cups apple cider simmered until reduced
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup white sugar
  • 2 eggs large
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup butter melted
  • 2 tsp cinnamon ground
  • 1/4 tsp nutmeg ground
  • 1/4 tsp salt pinch

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a baking pan and set aside.
  • In a small saucepan, simmer the apple cider until reduced by about half. Let cool slightly.
  • In a large bowl, whisk together the flour, brown sugar, white sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the eggs, melted butter, and cooled cider reduction.
  • Pour wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Scrape the batter into the prepared pan and bake for about 35 minutes, or until a toothpick comes out mostly clean.
  • Cool in the pan for 15 minutes before slicing and serving.

Notes

For extra apple flavor, add diced apples to the batter. Pair slices with caramel drizzle or vanilla ice cream for an indulgent fall dessert. Leftovers make excellent French toast the next day.
