Instructions
Preheat oven to 350°F (175°C). Grease and flour a bundt or cake pan.
In a saucepan, simmer apple cider until reduced by half (about 15 minutes). Let cool.
Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
Cream butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and cooled reduced cider.
Gradually add dry ingredients to wet mixture, mixing until just combined. Fold in optional apples, pecans, or raisins if using.
Pour batter into prepared pan and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before dusting with powdered sugar, glazing with cider drizzle, or topping with cream cheese frosting.
Notes
For a donut-style variation, bake in a bundt pan and coat with cinnamon sugar. A caramel drizzle also makes a perfect finishing touch.
